Is the shield of haakan II a better idea for this build? I haven't played since like 1.2 so I was just wondering, if anyone is bored :) Also currently lightning/cold skill plan, so far I have been able to do one duncraig run with only dying once XD

Missing sigs.

I would consider Haakan a more defensive option for labs, a good crafted shield is probably the best offensive shield you can get.
Personally I would have gone with
Black Void
Black Void
Heavy Belt (Sacred)

Defense: (3060 - 3442) to (3304 - 3717)
Required Level: 100
Required Strength: 568
Item Level: 120
20% Attack Speed
Adds 10-15 damage
(10 to 15)% Life stolen per Hit
Slow Target 10%
+(140 to 170)% Enhanced Defense
10% to Strength
10% to Dexterity
Target Takes Additional Damage of (25 to 50)
30% Magic Find
Socketed (2)
for belt, seems way more beneficial than what you have, same could be said for
Royal Circlet
Royal Circlet
Tiara (Sacred)

Defense: (1740 - 1957) to (1968 - 2214)
Required Level: 100
Required Dexterity: 392
Item Level: 105
+2 to All Skills
+150% Damage to Demons
+150% Damage to Undead
+(140 to 170)% Enhanced Defense
(21 to 25)% to All Attributes
Elemental Resists +(25 to 30)%
Physical Resist 5%
(21 to 25)% Magic Find
Socketed (4)
. I suspect that you are only just above the block cap with your current setup, which means that if you try to run a MF setup, you will drop below the cap. A lot of items with no dex.
Beads of the Snake Queen
Beads of the Snake Queen
Amulet

Required Level: 100
Item Level: 120
4% Chance to cast level 33 Scorpion Blade on Kill
Adds 5-10 damage
Stun Attack
(20 to 25)% to Strength
(20 to 25)% to Dexterity
+(200 to 500) Defense
+100 Life after each Kill
would also help you get more dex. Your setup should be able to run Duncraig fairly well, although with very little MF.

what would you consider to be a good MF?

Like already mentioned, 200 MF is a good starting point but you mostly won't achieve that without some sort of MF item investment.
Lilith's Temptation
Lilith's Temptation
Plated Belt (Sacred)

Defense: (3680 - 4089) to (4031 - 4479)
Required Level: 100
Item Level: 105
3% Chance to cast level 2 Time Strike on Striking
+(170 to 200)% Enhanced Defense
-100 to Life
(60 to 100)% Magic Find
Requirements -100%
Socketed (2)
is a good baseline. I don't how you like your sustain but if you want more leeching potential, consider taking a few points out of Moonstrike and put them into Bladestorm. The damage of Bladestorm won't increase much but the physical damage portion will be larger, making you leech more. Also, rings have basically no MOs on them, consider finding something to use on them, it's not a huge difference but mana regen can be nice, extra defense as well. Plenty of MO space on the rings, no reason not to.
Edit: Forgot to mention that you're missing out on 4% free absorb from Symbol of Esu.

200MF is actually pretty easy to reach without any real item investments. You will most likely have filler space for MOs, should be able to get atleast around 50% from MOs. Charms you can get a lot of MF from, a wormhole is around 100mf (unless you really need the stats on it, but i've never had any real problem/difference from running a clean MO on any of my chars, and you only need mf when farming anyway). Then you have Butcher's tooth and bull prince rodeo which gives a total of 40%. And ofc as you said, if you can free up the belt slot (which you usually can) then you have another free 80-120mf from Liliths.

So from just a Lilith's (+Butchers+Bull Prince) you reach 200%mf, and you can usually MO mf on atleast the jewelry, because there is rarely anything else you wanna MO on them/need the levels for (unless you got a boatloads of UMO's) which is another minimum 45%mf.
Then you have the sleep for another 40% mf, wormhole for another ~60-110%mf. Then you most likely wanna use Royal Circlet(which should be close to BiS for anything) which gives another 30%mf. So 200%mf I would say is really the bare minimum you can get without sacrificing any clear speed.

TLDR; Charms gives more MF than you think. Charms + Lilith = Minimum of 200%mf.

(or just play bowzon and get 600%mf without sacrifing any clear speed  )
