Minimum damage builds will struggle with damage, since you can't force roll minimum damage jewels anymore.

How do you decide between lion stance and wolf stance? Im doing the normal phys version but with lion stance and its been going great.

King's Blood is decent enough as an alternative to Crescent Moon but really can't compare to Gharaniq or Grandfather. You basically get no benefit from max damage (even ripstars don't give enough to actually do anything) but the base damage is pretty solid. The EWD scaling of 1h weapons relative to class specifics or 2h swords is where you really lose out.

Which is a problem, because it's significantly more expensive to stick a Vez in a blade than it is to put some low runes into a war knife.

Lion stance will be your early damage and the set pieces in the guide underline that, but the EWD from Wolf Stance wins out in the end if you're not running

? I thought there was a shield that also gave fortress pierce but I'm not finding it in the docs.

When I traded you that Grandfather it was under the assumption you were making a bowzone guide not a barb guide w the bowzone in a tower.

Also please consider pumping out more guides

Yeah, the sets give so much strength that it's probably better to stack lion stance. Once you rid yourself of the sets, wolf is better.

Fortress is only used to buff Guard Towers pretty much and the damage on that weapon isn't that amazing. It's probably a fine substitute for Crescent Moon but I wouldn't use it past that.
