additionally, the servers we run are mostly just some home desktop computers, not dedicated servers in a data center or something, so that increases lag as well.

What "type" of lag? There are three types, FPS (client), TPS (server), and Latency (internet). Almost always latency followed next by client, unless of course people are attempting to lag out a server with gold-drop exploit or something similar.
