1) When I make honorific / sacred honorific, I should fill sockets? I don't know because honorifics are about MOs, and putting anything in sockets will increase it's required level, right?

1) Sockets will increase level only when they have higher level than item. Sacreds have high enough level to be able to put low level runes or perfect gems.
2) Blessing won't change item's level

are you talking about level challenge 1? The docs explain all about it. you can save anya for each difficulty, so you get a scroll of resist for each difficulty
