The bonuses you get from having multiple pieces of the same set, does that work on Mercenaries?

I'm pretty sure it does, though they can't wear class-specific pieces with the exception of the Barbarian.

What are 'Combat Speeds' exactly? I see items with +20% Combat Speeds etc.

I'm guessing that it means IAS, but does it also include FHR, Faster Block, Faster Run?

It should be Attack Speed, Faster Cast Rate, Faster Hit Recovery, and Faster Block Rate.

Yes but you have to equip them if you want to know the bonuses, it won't show in merc page.

What's the function of edyrem's time-travel? it's a quest item and says "open a rift to toraja..." but I can't seem to interact with it it any way

you normaly have to walk trough the jungles to get to Toraja , but once you get there you can find the scrolls that can allow you to open a portal to Toraja while you are in town . https://imgur.com/epnkXCH .that way you avoid the time wasted going trough the jungles to get there -> cube the stroll -> the portal is opened

your quests stay finished even if you downlevel your character , to prevent any abuses iirc , such as Charsi imbue and other stats/+ skill point quests .

taking a new character to level 100 in Nightmare can be done in 1 or 2 peacefull afternoons , depending on how much time you want to invest into gaming
