What character can get the most %EWD just in general, not counting any super rare items? Would it likely be druid with Werebear morph and bear summon synergy? That's like 1.2k% already isn't it? I know barb and spearzon get a lot but not that much do they?

Clearly nec, famine + OP relic blood of creation (this item not even rare).
If no blood of creation, I would say bear and nec are close in ewd, like both in top ewd tier.
No firedance or prebuff.
But highest ewd alone doesnt mean anything, I suppose.

Can I somehow avoid Manoruk's nova or absorb it? Damage seems completely random. My bowzon has almost 15k life, resistances capped, 50% PR. I don't destroy the totem that says "Manoruk casts more dangerous spells". And he does no damage, half my health or instagibs me instantly. I stay on the edge of arena so I have highest chance to avoid the nova but 8/10 runs I get instagibbed by his nova.
