Don't think so, however the main page for ubers does have a "strategy" section for each and has a lot of that type of information for each.

Only with skills like Dark power / Wolf stance / Mark of the wild etc.

I am not asking with skills to buff, I am asking if they are using attack animation (benefit by IAS) or cast animation (benefit by FCR).
Based on your answer, it's attack animation (even though look like they cast a spell?)

Some creature doesn't even cast time, so I believe it's attack speed

There is no stat called minion attack/cast speed, so no. The only thing you can get for minions is dmg and attack rating.
